What are technologies used to by humans to influence desired traits in organism?

One of the methods to genetically modify organisms is simply the selective breeding of organisms with better resistance to bacteria and viruses and higher nutrient quantities. This is the method many early farms hundreds of years back used before we had the technology to insert genes into organisms. The method was used to make better and more nutrient-rich foods and was also used to help domesticate the pets of today, like cats and dogs. This method is mainly used when there is less need to be precise with which genes you wish to change or enhance, like if you just wanted to get rid of a few traits.

The second method is using a "high-speed particle bombardment" method to insert certain genes into a plant. This method is currently unsuitable for use on animals because it works by shooting the foreign gene into the plant you wish to modify at extremely high speeds to ensure it attatches correctly, and this is obviously not usable for animals. This method is used to be more exact, but using this method there is no way to remove certain genes, like the first method I talked about.

If you want to get rid of a certain gene, you should take your chances with selective breeding. It will take a while, but it will work decently if you do it correctly. If you simply want to insert one gene, use the second method!
